Does steam kill bacteria and viruses?

Yes, provided the surface gets hot enough for long enough. At around 100°C, steam kills the great majority of common household bacteria within seconds of contact. The evidence is strong:

  • It destroys tough biofilms. A study in Food Control showed steam inactivated E. coli O157:H7, Salmonella Typhimurium and Listeria monocytogenes biofilms on both plastic and stainless steel [3] — biofilms being notoriously hard for sprays to penetrate.
